About SPELT & KAMUT…
These are ancient, high protein grains and relatives of modern wheat. They have a great flavour and are easily absorbed by the body. They are particularly enjoyed by many people requiring special diets, such as those who have a low wheat tolerance or wheat and gluten sensitivities or allergies. These pastas are easily digested and have a great, nutty taste! Spelt flour is versatile, used in baking breads, cakes & muffins and in pizza dough.Other health benefits of Spelt and Kamut:
- contain higher protein content than normal wheat. Kamut (or Khorasan) has up to 40% higher protein level than the national average for wheat.
- contains higher percentage of lipids, essential amino acids, vitamins (B2, manganese, niacin, thiamin & copper in spelt) and minerals which produce more energy than carbohydrates. Kamut is described as a "high energy grain"
- Lower GI and better for people with diabetes or those with fluctuating blood sugar levels (starch in spelt is metabilised more slowly than normal wheat)
- contain more fibre and less glutamic acid than normal wheat

Something to note:
As Organic Flours have no chemicals or preservatives added to them, the smell of the grain (and hence the pasta) may be a little different from "typical" wheat / pasta.Rest assurred that all our pasta maintains quality & freshness!

L'ABRUZZESE's Greenwheat Freekeh Pasta & Spelt – Freekeh PastaWHAT IS FREEKEH ? (pronounced “free-kah”)
Freekeh is
Freekeh is processed from durum wheat, and harvested while the grains are still young & green. The grains are parched, roasted and dried. It has a nutty texture with a slight smoky flavour and makes an excellent alternative to rice. Freekeh was first discovered in 2300BC in the Eastern Mediterranean when a city under siege harvested their crop early. When the green wheat was set on fire the villagers rubbed away the burnt outer layer to discover the green grain.- Low in fat
- Low GI
- Low Carb
- High fibre – 4x that of brown rice!
- Great for weight loss
- Good for general bowel health
- Has no GMOs
Freekeh is a Nutritional Powerhouse. Researched and tested by the CSIRO, it is a low GI food with four times the fibre content of brown rice. It has a high protein content compared to other grains, is low in fat and rich in calcium, iron and zinc.
