Classic Fresh-Egg Noodles

These combine Australia 's finest durum wheat semolina, farm-fresh eggs and purified water. Selected egg noodles are available in all-natural gourmet flavours including sun-dried spinach, sun-dried tomato, squid ink and saffron (to name a few). Our noodles are hand cut and laid on trays using home-style methods, allowing you the option of cooking the pasta in different lengths – either short, by breaking them in two or left long.

Our lasagna sheets have been used by many of our customers to easily create cannelloni and ravioli.

These are ideal for soups, mixed with legumes or can be used as perfect accompaniments for stir-fries.

Gourmet Flavoured Home-style Pasta

We also make pasta using gourmet flavours such as squid ink (black) and saffron (yellow), giving subtle yet pleasurable taste as well as offering a unique meal presentation to any dinner plate.

Recipe Ideas - for the squid ink pasta, try a simple "napolitano" tomato & basil sauce or a fresh seafood mix (calamari, prawns, mussels) "alla marinara" sauce.

For the saffron fettuccine, try a light cream, pancetta (or bacon) and parsley sauce.


Rustica “ Al Bronzo ” Large Pasta Shapes

Rustica Pasta “Al Bronzo”

A recent innovation, “Al Bronzo” or “ bronze-style” pasta shapes have a distinct, rough texture. With numerous folds and cavities, this pasta makes it perfect for capturing and holding the flavours of all your favourite sauces. Made from first class durum wheat semolina these include:

In 500g boxed varieties

  • Oyster shells (large sea-shells)
  • Lumaconi rigati (large snail shells)
  • Rigatoni (large tubes)

All cartons have a special recipe featured on the pack

Due to their large shape, these varieties are best for stuffing with food combinations such as cheeses/ricotta, ham/bacon, seafood or your favourite minced meat.

These pasta shapes are just like grandma use to make in her own kitchen. Our “fusilli paesani”, for example, are traditionally made by rolling pieces of pasta around a knitting needle. The simple process of scraping three fingers into a layer of pasta has created “cavatelli” for many generations.

These are little pasta shapes suitable for adding substance to your soups, stockpots, and always a delightful meal for young children.
