Our Free Range Egg and Traditional Pasta are made using only the best Australian Durum Wheat Semolina, recognised among the best worldwide.
We extrude our pasta using bronze dies that makes the pasta naturally rough.
We follow a rigorous slow and gradual air-drying process for 36-48hrs at low temperatures, to preserve the integrity and the nutritional benefits of the ingredients.
The slow air-drying process at a low-temperature, is fundamental to maintain a higher content of protein and for the pasta to hold its shape and "al dente" quality.
