Whole wheat flour is made by stone-grinding or steel-rolling the entire grain or kernel of wheat: bran, endosperm, and germ. With its brownish, speckled look, whole wheat flour has full-bodied flavor, texture, and fiber as well as naturally occurring vitamins and minerals. Because the outer bran contains tannin, whole wheat has a bold, slightly bitter taste. Mild white whole wheat flour is ivory to cream in color.
