ARTISAN pasta is slow dried in air at low temperatures (48-55 hours under 40°C) which preserves the nutritional value of raw ingredients, preventing changes to the gluten structure helps to retains nutrients and is easier to digest! 

Instead, mass-produced pasta is generally extruded faster using lower quality grain, fast dried (2-3hrs, even using microwaves) at high temperatures (70-80°C), which reduces vitamins and nutritional quality, potentially causing digestion issues, often mistakenly linked to gluten.
