Artisan pasta is slow-dried at low temperatures (under 40°C for 48–55 hours), preserving nutritional value and making it easier to digest. In contrast, mass-produced pasta is fast-dried at high temperatures (70–120°C for 2–10 hours), which can reduce nutrients and cause digestive difficulties sometimes mistaken for gluten intolerance, not happening with Artisan Pasta!
